And for those with a curiosity for honey far beyond toast and tea, our senses were spirited away at a recent workshop at Floris, helmed by the brilliant Sarah Wyndham Lewis [aka the ‘Honey Sommelier’. Follower her @honeysommelierlondon on Instagram]. It was a revelation to discover just how many personalities honey could have, depending on flower, region, and even the temperament of the bees.

One spoonful might taste and smell like toffee or fresh hay, while another edges towards citrus peel or old leather-bound books. The nuances were astonishing, and they made it clear why honey brings such rich, malleable character to Honey Oud’s composition – it binds, tempers and elevates the oudh with each expertly-blended drop.
